Didn't know uv had this built-in, but seems to fully replace our usage here. Updated the justfile to take a single arg and added a comment; the usage we have in ./RELEASE.md should remain the same.

2. On a new branch, update version strings with the `bump` command, either to the next minor or patch version, based on the changes that are included in this new release.
- If there are only bug fixes and no new features, run `uv run just bump patch`.
- If there are features being released, run `uv run just bump minor`.

(not sure the minimum uv version to use this, but we could configure a minimum required-version of uv in our pyproject.toml.)
